Description: This off-dry melomel-style wine combines honey which has been co-fermented with ripe pie cherries. Despite the relatively high residual sugars, the intensity of the fruit acids creates a tart and lively mouthfeel.
Varietal: 67% Colorado Wildflower Honey, 33% Cherry Fruit	Alcohol: 12%
Chemistry: 20 Brix, pH: 3.7, TA: .39g/l, Residual Sugar: 1%
Notes: Our experience with meads and honey wines is that although very drinkable initially, they tend to peak in flavor around year three, and generally improve in smoothness and body with age. So if you have the patience to cellar your meads, you will be well rewarded!
